Tahini Honey Cookies

I unconsciously bake when I'm upset, sad, or stressed about something. Needless to say, this past weekend fell into that category and I know I'm not the only one feeling the weirdness in the air. I'm also not one to get political (especially not on this platform), so instead, let's talk about how F-ing amazing these cookies are! I literally woke up from my slumber Saturday morning still dreaming...dreaming of tahini in cookies. These are not only tasty (boyfriend approved and Nic doesn't even love cookies that much), but they are stunning and filled with even more beautiful, simple ingredients like maca - an adaptogen that aids hormone balance amongst both men and women, increases mental function: think better focus and memory, ups the immune system, and is also said to boost libido), almond flour, local honey, and of course tahini. They are 100% dairy-free, gluten-free, corn-free, and refined sugar-free and can also be made vegan. Do note, that the flax egg variation came out slightly more dry, but still totally yummy.

[Makes approx. 12 cookies]

Ingredients // Pantry List:

  • Brown rice flour
  • Almond flour
  • Baking soda
  • Cinnamon
  • Real vanilla extract
  • Egg (or flax meal if vegan)
  • Tahini
  • Honey (your allergies will thank you if it's local)
  • Avocado oil (or walnut oil)
  • Salt

Instructions:

  • Preheat oven to 350F
  • Combine the following dry ingredients in a large bowl: 1 cup of brown rice flour, 1/4 cup of almond flour, 1/2 teaspoon of baking soda, 1/2 teaspoon of cinnamon, a very large pinch of salt
  • Whisk together the following dry ingredients in a medium size bowl: 1 egg (or 1 flax seed egg), 1/4 cup of honey, 1/4 cup of oil, 1/4 cup of tahini, 1/2 teaspoon of vanilla
  • Stir wet ingredients into dry until they are just combined
  • Create 12ish balls and place them on a cookie sheet covered with parchment paper
  • Bake for 10-12 mins or until the tops are a nice golden brown
