Simple Spring Soup

I love salad bowls as much as the next girl, but even when it's warm out sometimes you just need a bowl of soup. Hence, the reason for this super simple vitamix-ed springtime soup recipe! Vitamix-ed soup is my go-to on a busy day. It's packed with nutrients, takes only minutes to throw together, and can be eaten with tons of fun toppings (or out of a mug if you're in a hurry). This recipe is especially great for all of the squash you may have laying around as summer approaches. You can pump the nutrient level up on this bowl of soupy goodness by using bone broth as I did in the recipe below. However, if you don't have any or if you are vegan have no fear, you can still make a rich, creamy, dreamy bowl of yum! Simply boil your veggies in water instead of steaming them and then use said water as the base of your soup. It will have retained nutrients from your vegetables and will be warmed up and ready for blending #nowaste style ;)

Ingredients // Pantry items: 

  • Carrots
  • Zucchini
  • Broccoli (I used frozen)
  • Bone broth -- or leftover cooking water
  • Curry powder
  • Salt
  • Toppings of choice (think hemp hearts, kelp noodles, sautรฉed kale, pumpkin seeds, etc. the sky is really the limit here!)

Instructions:

  • Chop one medium sized carrot and one medium sized zucchini -- big chunks are totally fine -- and throw them in a steamer (or in boiling water) with 1/2c of broccoli florets 
  • When veggies are easy to poke thru with a fork, remove from heat 
  • Combine steamed veggies with 1 cup of bone broth (or one cup of leftover veg water if going the vegan route) in a high speed blender
  • Blend, blend, blend on high
  • Add a heaping 1/4 teaspoon of curry powder + salt to taste
  • Blend some more
  • Serve in your favorite bowl with toppings of your choice

Enjoy and feel free to double + triple this recipe as needed. I've doubled it on multiple occasions for build your own soup bowl date nights with Nic (the boyfriend). If you're feeling like you need some extra fat, add avocado or hemp hearts to the Vitamix before blending. Alternatively, if you're feeling the need to cleanse include some extra greens (think spinach or chard) and add a teaspoon of chlorella.
